It differs from chicken barbecues found elsewhere in the Philippines because of the marinade, forgoing soy sauce and including aromatics only used in the Ilonggo region

Their Ka Inato Chicken is so much the same version of the iconic Ilonggo dish. So you think Mang Inasal, ChicBoy, Bacolod Chicken Inasal and JT's Manukan, (oh boy there are more) have stirred foodies of Manila doing the chicken dance, well the tasty chicken business is getting bigger than you think
This Ilonggo adaptation of chicken barbecue uses local spiced vinegar known as sinamak as both marinade and dip since it is not soup based like TINU-OM NGA MANOK
Along with the Kansi, we also ordered Fresh Lumpia, Grilled Pusit, and an Ilonggo classic Chicken Inasal to get an ample breadth of what the restaurant serves

It's a refreshing to see that Bistro Carcosa, with its elegant plating and complex dishes, is slowly introducing complexity and sophistication to the Ilonggo dining experience
I’ve not had time to return to Iloilo, though I was recently on the neighboring island of Cebu (more about that in another post), but Ilonggo and Bacolonon (from the nearby city of Bacolod) food can be found in various places here in Manila for a reasonable price
