Wrap the cooked vegetable in springroll (lumpia) wrapper. Lumpiang Togue (Beansprout) or Lumpiang Gulay (Vegetables) which in Malabon are called Sumpia, with a spicy vinegar dipping sauce and can be paired with Lugaw (Filipino Congee)
Boil all the vegetables until half cooked then drain and set aside. Heat the butter then add the garlic and saute until brownish then add the shrimps and saute for a minute then add all the vegetables and stir well
Add the water then simmer until done, then sprinkle with spring onion, crack the egg then serve. Sisig is a popular Filipino dish made of pork cheeks, liver etc, and I love sisig, but can we cook it using eggplant to replace the pork cheeks and ears
Laing originated from the Bicol region of Philippines, but is popular across the country. This is one of my favorite dishes, specially if it is cooked by my Bicolana sister in law, really yummy
