Ingredients

  • 5 tbsp refined coconut oil or 4 tbsp olive oil or vegan butter
  • 5 cloves of garlic, crushed
  • 1/4 cup onion, minced
  • 1/4 cup raw jackfruit, shredded. Available at most Asian grocery stores.
  • 1 block tofu, cut into cubes
  • 1/4 cup chopped mushrooms (I used trumpet mushrooms but any kind would do)
  • 1/2 cup coconut milk
  • 5-6 Thai chillies (2 of them minced)
  • a dash of salt
  • a dash of black pepper
