  • 40 mins Sopas is a hearty and warming Filipino soup full of shredded chicken, macaroni pasta, carrots and cabbage combined with evaporated milk
  • 1 tbsp butter 4 cloves garlic, finely chopped 1 small onion, diced 1 carrot, cut into quarter circles 250g cooked chicken, shredded 4 cups chicken broth 1½ cups macaroni elbow pasta ¼ cabbage, chopped 1 can evaporated milk salt and pepper, to season Directions Heat the butter in a saucepan over medium heat. Add the garlic, onion and carrot then cook for 2 to 3 minutes, or until softened. Add the chicken and cook for a further 2 to 3 minutes Pour in the chicken broth and bring to the boil. Simmer for 5 minutes Add the macaroni, cook, stirring occasionally for 8 minutes or until the pasta is almost cooked. Add the cabbage and evaporated milk and simmer for a further 2 to 3 minutes Season with salt and pepper and serve hot. Notes If the soup becomes too dry while the pasta is cooking you can top up the liquid with extra stock.You can add other ingredients to this soup base for a different flavour combination, try chopped ham, hot dog, boiled quail eggs or pork pieces. 3.5.3208
