Ingredients

  • 90 g plus 2 TBS butter, divided (1/3 cup plus 2 TBS)
  • 1 large onion, peeled and chopped (about 1 1/2 cups)
  • 3 ribs celery, trimmed and coarsley chopped
  • 1/2 bay leaf
  • 1 small sprig fresh thyme
  • 2 X (400g) tins of chopped tomatoes in puree undrained (1 28 ounce tin)
  • 3 TBS tomato puree (tomato paste)
  • 50 g of plain flour (6 1/2 TBS)
  • 450 ml single cream (2 cups half and half)
