Ingredients

  • For the cakes
  • 65 g of butter, softened (1/4 cup)
  • 105 g of soft light brown sugar (1/2 cup, packed)
  • 2 large free range eggs
  • 2 TBS molasses
  • 210 g of plain flour (1 1/2 cups)
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp freshly grated nutmeg
  • 1 tsp bicarbonate of soda (baking soda)
  • 120 ml of buttermilk or sour milk (1/2 cup)
  • 75 g of raisins (1/2 cup)
  • 60 g chopped toasted walnuts (1/2 cup)

  • 125 g butter, softened (1/2 cup)
  • 195 g icing sugar, sifted (1 1/2 cups)
  • 1/2 tsp vanilla essence
