Ingredients

  • 1 to 1-1/2 lbs pagi (stingray) meat, cut into serving pieces
  • 1 can coconut milk
  • 6 cloves garlic, minced
  • 1 pc. medium red onions, sliced
  • 3 thumb size ginger, thinly sliced
  • 6 pcs bay leaves
  • 8-10 pcs whole peppercorns
  • 4 pcs fresh chili peppers
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsps patis (fish sauce)
  • 2-3 tbsps olive oil
  • 2 tsps achuete powder
  • salt and pepper to taste
