Ingredients

  • 1/3 cup vegetable oil
  • 1-2 lbs whole tilapia (cleaned and scaled)*
  • 1 1/2 cup white vinegar
  • 6 cloves garlic, minced
  • 1 tsp black peppercorns
  • 1/3 cup brown sugar
  • 1 large carrot, julienned or cut in florets
  • 1 medium sweet onion
  • 1 red or green bell pepper, sliced
  • 1/2 tsp salt
  • parsley (to garnish)*
