Ingredients

  • 1 cup Flour
  • 1/3 cup Confectioner's (icing) Sugar
  • 1/8 teaspoon Salt
  • 1/2 cup (1 stick) Butter
  • 1 cup Sugar
  • 5 Tablespoons freshly squeezed Lemon Juice
  • Grated zest of 1 Lemon 2 Tablespoons Flour
  • 3/4 teaspoon Baking Powder
  • 2 Eggs, slightly beaten
  • 1/2 - 3/4 cup shredded Coconut (sweetened)
  • Extra icing sugar for dusting (optional)
