Ingredients

  • 1 TBS olive oil
  • 8 meaty chicken thighs (bone in, skin on)
  • 1 large onion, peeled and chopped
  • 2 fat cloves garlic, peeled and minced
  • 1 red pepper, seeded and chopped
  • 1 medium tomatoes, chopped
  • 1/2 tsp smoked paprika
  • 250 g Bomba Paella Rice (19 TBS)
  • 75 ml dry white wine (2 1/2 fluid ounces)
  • 400 ml of chicken stock (generous 14 fluid ounces)
  • chopped fresh flat leaf parsley to garnish
