Ingredients

  • Back to the pork chops.
  • Serves 4
  • Ingredients 2 tbsp sunflower oil
  • Salt and pepper
  • 1 onion
  • 1 red pepper - cut into cubes
  • 1 yellow pepper - cut into cubes
  • 2 sticks of celery - cut into chunks
  • 2 cm root ginger finely chopped (I used ground ginger)
  • 2 garlic cloves, finely chopped
  • 4 tbsp brown sugar
  • 3 tsp dry mustard
  • juice of 1 lime 1/2 tbsp od West Indian hot sauce
  • 3 tbsp tomato puree
  • 400 g can tomatoes
  • 150 ml water or chicken stock
  • boiled rice to serve.

  • Ingredients
  • 1.4 kg sweet potatoes, peeled and sliced about the size of an orange segment.
  • 5 tbsp sunflower oil
  • 3 tbsp soft light brown sugar
  • Juice of 2 limes
  • pepper
  • For the jerk butter
  • 50 g butter, slightly softened.
  • 1/2 tbsp ground all spice
  • 1/2 tsp ground ginger
  • 1/2 tsp cayene pepper
  • 1/2 tbsp black peppercorns
  • 1/2 tsp ground cinamon
  • 2 garlic cloves
  • 2 tsp brown sugar.
