  • For the cake layer
  • 30 g white vegetable fat (1/8 cup crisco) softened
  • 96 g of caster sugar (1/2 cup)
  • 1 large free range egg, lightly beaten
  • 1/4 tsp vanilla
  • 1/4 tsp lemon extract
  • 120 ml milk (1/2 cup)
  • 140 g flour
  • 1 1/2 tsp baking powder
  • pinch salt
  •  
  • For the raspberry layer
  • 300 g frozen raspberries ( 2 cups)
  • 96 g sugar (1/2 cup)
  • 2 TBS corn flour (cornstarch)
  • 1 1/2 TBS water
  • 1 tsp raspberry liqeuer
  • 150 g fresh raspberries
